EASY BAKED OATMEAL | with mixed berries for a healthy breakfast!

This berry baked oatmeal is another delicious way to enjoy oats for breakfast! The top is slightly golden while the inside is soft and loaded with a pretty sweet berry assortment.

Just when I thought overnight oats or the classic stovetop oatmeal were my favorites, this baked oatmeal proves its worth for breakfast. It’s easily sliceable into 6 portions and can be jazzed up with a quick dollop of creamy yogurt. I’d say this healthy baked oatmeal recipe is another perennial winner for breakfast meal prep.

.3 -> - You guys are gonna go head over heels
.67 -> for this Berry Baked Oatmeal recipe.
.68 -> If you love oats for breakfast,
.24 -> but want a new spin on a bowl of oatmeal
.55 -> or a jar of overnight oats,
.2 -> let me introduce you to the concept of baked oatmeal,
.08 -> which is essentially like eating bread pudding
.6 -> for breakfast, except it's healthy.
.91 -> But the best part is that baked oatmeal
.65 -> is super easy to make and it's budget friendly
.14 -> when you use frozen berries like I'm gonna show you today.
.17 -> The edges and topping of baked oatmeal are a bit crispy,
.84 -> but the inside is soft and squishy in the best way possible.
.47 -> I love to make this recipe when my family comes to visit,
.11 -> and I've got a peaches and cream version in my cookbook,
.84 -> which is also amazing.
.15 -> But let me show you how to make this deliciously sweet
.09 -> berry version today.
.49 -> To get started, preheat your oven to 375 degrees Fahrenheit
.48 -> or 190 degrees Celsius,
.55 -> and grease a 9-inch square baking dish.
.55 -> You can use butter or oil, like coconut oil,
.01 -> depending on if you'd like to make the recipe dairy free
.32 -> or not.
.153 -> And I just use a paper towel
.87 -> to make sure that the baking dish is well coated.
.84 -> Like many of my baking recipes,
.46 -> you'll mix the wet and dry ingredients separately,
.83 -> and then combine them together.
.69 -> So for the dry ingredients,
.16 -> you'll start with 2 cups of old-fashioned rolled oats,
.92 -> and I'm using certified gluten-free oats.
.53 -> And once those are measured out,
.06 -> you can add them to a large mixing bowl.
.4 -> I also like a little crunch factor in my baked oatmeal,
.28 -> so to the oatmeal, you can add a 1/2 cup of sliced almonds,
-> though if you have another nut you prefer,
.8 -> go ahead and swap that in.
.81 -> For a little sweet warming flavor,
.79 -> add 1 teaspoon of ground cinnamon,
.25 -> and then add 1/2 a teaspoon of baking soda
.8 -> and 1/2 a teaspoon of kosher salt.
.2 -> Stir the dry ingredients together
.7 -> until they're well combined,
.9 -> and then set this bowl off to the side for now.
.73 -> In another mixing bowl,
.84 -> you'll mix together the wet ingredients,
.85 -> and that includes 1 3/4 quarters cup of milk,
.43 -> and you can use dairy or dairy free,
.28 -> a 1/4 cup of honey or maple syrup to lightly sweeten it,
.94 -> two large eggs,
.99 -> which are the binders that turn
.82 -> what would otherwise be a simple oatmeal recipe
.85 -> into a baked oatmeal breakfast casserole.
.06 -> 2 tablespoons of melted butter or coconut oil,
.94 -> it's up to you.
.14 -> And 2 teaspoons of vanilla extract.
.11 -> Whisk that all together until it's lightly frothy,
.66 -> and then pour these what ingredients into the bowl
.12 -> that has your dry ingredients.
.128 -> (bright music)
.59 -> All right, now it's time for the berries.
.63 -> You'll need 2 1/2 cups of frozen mixed berries,
.54 -> and I love frozen berries for a couple of reasons.
.48 -> First, they're budget friendly.
.43 -> Second, they're easy to find
.87 -> during an off-season like winter.
.03 -> And third, I love how the frozen berries become extra soft
.54 -> and mushy as they're baked, even more so than fresh berries.
.68 -> But you could, of course, use fresh berries as well
.69 -> in this recipe, if they're in season,
.49 -> or you can find them easily in your market.
.13 -> So add the berries to your bowl
.57 -> and then stir all of that together.
.46 -> Your milk may turn a bluish purple from the berries,
.79 -> but that's totally fine,
.14 -> and it just means that that berry goodness
.36 -> is getting mixed throughout.
.13 -> Pour this whole bowl of ingredients into your baking dish
.74 -> and then use a spoon or spatula to spread it throughout
.68 -> and sort of flatten the ingredients down,
.96 -> making sure that the oats are nestled really good
.33 -> in the liquid.
.59 -> Now, you don't have to do this part,
.57 -> but if you're planning to serve this up for a brunch
.97 -> or family gathering,
.29 -> I like to dot the top with a few extra berries
.78 -> and sliced almonds.
.13 -> It just gives a better nod
.57 -> to what your family and friends will find inside
.91 -> this baked oatmeal recipe when you slice into it
.49 -> and serve it up.
.11 -> I guess it's sort of like garnishing
.61 -> one of my savory recipes
.11 -> with a little sprinkling of herbs on top,
.6 -> except in this case, it's berries and sliced almonds.
.14 -> Bake the oatmeal for about 40 to 45 minutes
.57 -> or until it's set,
.86 -> and that just means that it's no longer liquidy,
.02 -> and the oatmeal has plumped up
.46 -> from absorbing the wet ingredients
.53 -> and the edges are slightly golden.
.99 -> All ovens bake a bit differently,
.67 -> so do check on it at the 40-minute mark,
.13 -> but it might still take a few more minutes.
.22 -> When you remove it from the oven, it's gonna smell amazing
.55 -> with that sweet cinnamony flavor
.32 -> wafting through your kitchen.
.88 -> And if you have kiddos,
.32 -> I guarantee you that they'll come running.
.69 -> I love how the berries on top
.13 -> sort of look like they're oozing into the oatmeal
.35 -> and then you've got those crunchy little bits of almond.
.14 -> You guys, this recipe is so good and it's so versatile.
.34 -> As I mentioned at the beginning,
.54 -> I have a peaches and cream version
.37 -> of it in the cookbook, which is also amazing,
.07 -> but this berry version is the one that I make most often
.77 -> because I always have frozen berries on hand.
.65 -> If you've watched my anti-inflammatory foods video,
.14 -> you know I'm a big fan of berries
.79 -> and I sneak them into recipes wherever possible.
.18 -> To serve it up, just scoop out a portion with a spatula
.88 -> or large spoon, and place it in a bowl.
.49 -> You can eat it plain while it's warm and soft
.77 -> straight from the oven,
.03 -> or dollop a few spoonfuls of your favorite yogurt on top
.97 -> whether it's dairy or dairy free,
.98 -> to amp up the protein
.18 -> and really drive those breakfast vibes home.
.21 -> It should also go without saying,
.92 -> because you guys know me,
.42 -> but this recipe is also perfect for meal prep.
.21 -> You can bake it up,
.23 -> portion it out into individual containers
.36 -> or store in one large container,
.28 -> and then reheat it throughout the week.
.98 -> I hope you enjoyed this new recipe video.
.96 -> And if you did,
.793 -> make sure to give it a thumbs up.
.15 -> Share it with your family and friends
.47 -> who love a good, hearty, healthy breakfast,
.5 -> and I will see you again in the next video.
.47 -> (bright music)
